
Caldo verde - La meilleure soupe du Portugal
Ingrédients :
- 250 g de chou vert (caldo verde)
- 600 g de pommes de terre
- 4 têtes d'ail
- 1 oignon
- 1 chouriço
- 1,5 dl d'huile d'olive
- sel et poivre
1. Lavez le chou vert, égouttez-le et plongez-le dans une marmitte d'eau salée en ébullition. Laissez cuire 10-15 minutes. Retirez le chou et réservez l'eau de cuisson.
2. Epluchez les pommes de terre, les ails et l'oignon. Coupez le tout en petits morçeaux et plongez dans l'eau de cuisson du chou vert. Ajoutez le chouriço entier, l'huile d'olive, sel et poivre. Faites cuire à feu moyen.
3. Quand les pommes de terre sont bien cuites, retirez le chouriço. Ecraser pommes de terre, oignons et ail dans le bouillon de cuisson.
4. Remettez sur le feu quelques minutes en ajoutant le chou et le chouriço que vous aurez couper en fines rondelles.
Servez bien chaud.

Servir le caldo verde avec une tranche de pain au mais (broa de milho)
